Traditionally, vitis vinifera used in wine making has been grown at latitudes between 30 degrees and 50 degrees in both the northern and southern hemispheres. Nashik is 20 degrees North thus the "New Latitude" label heralding the new wave of winemaking.
BLEU
Varietal: Shiraz - Cabernet
An assemblage of grapes from vineyards on the colluvial soils. After fermentation in stainless steel tanks, 60% of the wine is aged in medium toast, American oak for eight months the rest being aged in stainless steel.
BELLA
Varietal: Shiraz Rosé
An assemblage of grapes from vineyards exclusively. The grapes are harvested throughout mid-March to mid-April, depending on the peak ripeness of the region. The fruit undergoes a cold maceration for 6 hours to attain a rich, ruby colour. Made in a dry style with a residual sugar of 8 grams per litre.
BLANCA
Varietal: Chenin Blanc
The grapes are early harvested towards the end of January. After fermentation the wine is aged for four months in stainless steel.
